Stuffed Oysters


12 oysters (scrubbed)

4 cloves garlic (smashed)

1 cup Parmesan (grated)

½ cup onion (finely diced)

½ cup red pepper (diced)

¼ butter (softened)

1 lemon (juiced)

1 tsp soy sauce

1 tsp sugar

1 pinch salt

1 pinch pepper


Preheat the oven to 180C.

Combine the cheese, onion, red pepper, butter, garlic, soy sauce, sugar, lemon juice, salt and pepper in a bowl and stir to blend evenly.

Shuck the oysters, setting the half shells face up in a shallow baking dish.

Place an oyster in each shell and top with a generous spoonful of stuffing.

Grill the oysters in the oven until heated through and golden brown, no more than 10 minutes.

Cooks in: 25 minutes

Serves: 4
