2 Tbs Butter
1 Onion (finely chopped)
2 Cloves Garlic
1 Cup Risotto rice
2 Cups Chicken Stock
½ Cup Dry White Wine
½ Cup Mushrooms
On medium heat, add the butter and onions until the onions are cooked through.
Add the garlic, rice and chicken broth.
Cover and bring to the boil. When the rice is almost cooked through, add the white wine, then add the mushrooms and let it cook through.
Finish off with some thyme and parmesan cheese and serve!
Cooking time: 20 minutes
