Cherry Tart

Ingredients

2 cups cream cheese (softened)

2 ½ cups heavy whipping cream

400g Boudoir / ladyfinger biscuits

400g cherries (frozen)

1 tbsp flour / maize

2 tsp vanilla extract

Instructions

Strain cherries and set aside, reserving the juices. In a saucepan bring flour and cherry juice to a gentle boil. Once boiled remove from heat and let cool. Mix cream cheese, sugar, and vanilla together in a bowl. In a separate bowl beat whipping cream until stiff peaks form then fold into cream cheese mixture.

Arrange biscuits around sides and bottom of the pan then pour 1/2 of the filling over it and place another layer of biscuits on top of the filling. Pour remaining filling over second biscuit layer.

Pour cherry sauce over the filling and place the whole cherries on top.

Refrigerate and remove from pan once thoroughly chilled. Serve with a glass of Survivor MCC.
