Ingredients
Cookies
1½ cups powdered sugar
1 cup butter (softened)
1 tsp vanilla
½ tsp almond essence
1 egg
2½ cups all-purpose flour
1 tsp baking soda
1 tsp cream of tartar
Frosting
2 cups powdered sugar
½ tsp vanilla
2 Tbsp milk
Instructions
In large bowl, mix 1½ cups powdered sugar, the butter, 1 teaspoon vanilla, almond extract, and egg until well blended. Stir in flour, baking soda and cream of tartar. Cover and refrigerate for at least 3 hours.
Pre-heat oven to 180°C. Divide dough in half. On a lightly floured, cloth covered surface, roll each half of dough to 2cm thick. Cut into assorted festive shapes with cookie cutters. Place on ungreased cookie sheet.
Bake for 7 to 8 minutes or until light brown. Remove from cookie sheet to cooling rack and allow to cool completely, about 30 minutes.
In a medium bowl, beat all the frosting ingredients until smooth and spreadable. Tint with green food colour. Frost and decorate cookies as desired with frosting and hundreds and thousands.
